  Annotation  This C and E News cover story from July 2005 introduces readers to the concept of quality control in food analysis for food safety with an emphasis on the application of near-infrared (NIR) and encoded photometric infrared (EP-IR) spectroscopy, Fourier transform ion cyclotron resonance mass spectrometry (FT ICR MS), and microchip analysis. This article would be of potential use to faculty teaching any of these topics in their classroom.
