There are at least three good web sources for explanation of what is going on. First see the Σ-Δ simulator at the Analog Devices website. Second, look at Maxim's Application Note 1870 (you'll find the parent website has a wealth of information on ADCs of all varieties). Third, Bonnie Baker, in a series of columns in EDN in 2007-2008 gave a thorough analysis of how Σ-Δ converters work.
